Anyone Here Experienced With R/C Motor Speed Controls?

Several people here seem to have experience with speed controllers for R/C models. I need some help. I have a (top secret, for now) project I'm doing for one of my mills for which I want to use an R/C motor, but my requirements seem a bit unusual, as least for R/C models.

I'm looking for an ESC with an adjustable current limit that acts such that motor current NEVER exceeds the pre-set limit. It appears to me most will only roll back the current after the limit has been exceeded for some period of time, usually several seconds. I am using current limiting to limit maximum torque, so I don't break something in the system, so it's important that there be an absolute maximum current limit. My fallback is to design my own ESC, but I'd really rather not do that.

The motor is a 12VDC brushed motor, and, ideally, I'd be able to set the current limit over a range of perhaps 15-50A, or about 700W max. I would consider switching to a BLDC, if necessary, but that would create some other very difficult problems. It also needs to be reversible, though I'd be willing to give up that requirement if everything else is right.
